You might think the technique of using smokers to prepare meat is something you’d see more of in the southern United States, but think again. Restaurants
offering a variety of smoked food items are on the rise in Canada and two Kincardine restauranteurs are taking aim at some of the biggest and the best
smokers in the world. Bar Down owners/operators Alana Rozon and Louis Kosmerly, together with their team, will head to Florida on Dec. 25, in preparation for the Jimmy Jam BBQ Slam, running Jan. 4 to 6 near St. Augustine. While they’re no strangers to using a smoker for their restaurant items, this will be their first competition. (By Liz Small)
